The red is complex, aged, with a harmonious balance between fruity notes and hints of oak aging.
Tasting Notes
The wine has an expressive aroma with shades of red fruits: strawberries, cherries and red plum, supplemented with notes of black pepper, sandalwood, Mediterranean herbs and red tea. The taste is silky tannins, freshness and elegant finish.
Vineyards
The grapes for this wine are grown in Ygay Estate’s own vineyards, which cover 300 hectares in the southern part of Rioja Alta. The soils are predominantly lime-clay, at an altitude of 320 to 485 meters above sea level.
Production Method
The wine was aged for 24 months in American oak barrels.
Hand harvest was carried out from September 10 to October 8, 2019. After destable, the grapes were fermented in steel containers at a controlled temperature for 8-10 days with regular stirring for optimal color and aroma extraction. After fermentation, the solids were gently squeezed using a vertical press to extract color and ripe tannins.
Food Pairing
Wine goes well with a variety of dishes, including red meat, ham, baked fish and aged cheeses.
Wine is not just a drink — it is a whole experience. Its taste is influenced by serving temperature, the glass, aeration, and even how you take your first sip.
The right serving temperature is one of the key factors. Red wines 14–18°C, white wines 8–12°C, sparkling wines 6–8°C.
The best choice is a tulip-shaped glass (350–450 ml) with a narrowed top. Always hold the glass by the stem to avoid warming the wine.
Helps open up aromas and flavours. Red wines — 15–40 min before serving, whites and sparkling wines are served immediately after opening.
Quick tip: gently swirl the wine in the glassFirst sip — small, spread the wine across your palate.
Second sip — assess the balance of sweetness and acidity, fruity and spicy notes.
Before sipping, inhale the wine aroma without swirling, then gently swirl and inhale again. Note fruity, spicy, floral and woody notes.
Reds — meat, pasta, cheese
Whites — fish, seafood, poultry
Sparkling — appetizers to desserts.
